Chocolate Sandwich Cookies
Ingredients:
Cookies:
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cups baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
Filling:
1 8-ounce package cream cheese, softened
1/4 cup butter, softened
2 1/2 cups confectioners sugar
1 teaspoon vanilla extract
Sprinkles
Preparation:
Cookies:
In a mixing bowl, cream together butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in the vanilla. In a separate bowl, combine the flour, cocoa, baking soda and salt, then gradually add to creamed mixture. Cover and refrigerate for one hour or until easy to handle.
Preheat oven to 350 degrees. Roll cookie dough into 1-inch balls. Place 2 inches apart on ungreased baking sheet. Bake for 8-10 minutes or until the edges are firm. Let cool completely on wire racks.
Filling:
Combine all filling ingredients. When cookies are cool, spread cream cheese frosting on half of the cookies, then top each frosted cookie with an unfrosted cookie to make a sandwich. Roll the filling’s exposed edge in sprinkles.
