Classic Banana Bread

Classic Banana Bread
Ingredients:
2 C unbleached flour
1 C sugar
3/4 tsp baking soda
1/4 C butter
1/3 C non-fat plain yogurt
1 tsp vanilla
2 eggs
3 large ripe bananas, mashed
Preparation:
Combine flour and baking soda in separate bowl
Cream butter and sugar in medium bowl. Add the eggs and vanilla, stir well (I always use a whisk). Mix in bananas and yogurt. Add flour/baking soda combination to banana mixture in 1/2 cup increments.
Pour batter into bread pan coated with cooking spray. Bake at 350 for 60-75 minutes or until toothpick inserted into the center or the loaf comes out clean.
Cool in pan for 15 minutes then remove and cool completely on wire rack.
Note: I usually add a few sprinkles of nutmeg and cinnamon to the batter and sprinkle the top with chopped walnuts before baking.
