Hot Dog Onions

Hot Dog Onions
This condiment only takes about 45 minutes to make, and you could try adding different spices, or even mixing it with some of the ketchup.
Ingredients:
2 tablespoons canola oil
2 pounds Spanish onions, thinly sliced
24 ounces tomato purée
1 tablespoon apple cider vinegar
2 teaspoons Kosher salt
1 teaspoon Hungarian paprika
1/4 teaspoon dry mustard
1/4 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon granulated sugar
Pinch ground cinnamon
Pinch ground clove
Pinch ground ginger
Pinch ground cumin
Preparation:
Heat a large sauté pan and add the canola oil. Add the onions and cook for 6-8 minutes, stirring occasionally, to ensure the onions soften but do not brown. Add all of the remaining ingredients; bring to a boil and reduce to a low simmer. Cook for 40-45 minutes, stirring frequently during the cooking process to prevent sticking and burning. If the onion mixture becomes too thick, add 2-3 tablespoons of water to thin the sauce. Makes 1 quart
