Olive Oil Brownies

Olive Oil Brownies
Ingredients:
1/2 teaspoon salt
2 eggs (or 4 egg whites)
3 tablespoons Extra Virgin Olive Oil
2 teaspoons vanilla
3/4 cup chunky applesauce or banana, mashed
1 cup sugar
1/3 cup cocoa
1 cup flour
1/2 cup chocolate chips
1/2 pecans, walnuts or Brazil nuts, chopped
1/2 teaspoon baking soda
2 teaspoons orange flavoring or orange oil
Preparation:
Combine eggs, oil, orange flavoring or oil, vanilla and applesauce in mixing bowl. Sift together flour, cocoa, salt, sugar and baking soda. Add egg mixture, stir until blended. Add chips and nuts.
Pour into greased, 8-inch baking pan. Bake at 350 degrees for 25 to 35 minutes or until cake tester comes out clean when inserted in center.
Frosting:
1/2 cup chocolate chips (or mini marshmallows)
As soon as brownies come out of oven, sprinkle top with chips, let melt and spread evenly to edges.
Variation:
Spread with 3/4 cup raspberry jam.
Variation:
Add one or two of these

1/2 cup coconut
1 teaspoon instant coffee crystals
