Orange Sauce for Broccoli

Makes a great sauce for broccoli, also a good glaze for BBQ chicken, be inventive!

Ingredients:

1/2 teaspoon salt
1/2 teaspoon paprika
2 1/2 tablespoons grated orange rind
1/4 cup water
4 tablespoons butter
2 egg yolks, well beaten
1/2 cup orange juice
2 tablespoons lemon juice

Preparation:

Mix salt, paprika, grated rind, and water together. Cook for 5 minutes.
Add butter. Fold in egg yolks. Stir over hot water until thickened, add orange, and lemon joice, cook 1 minute longer. Yield: 1 cups
