Fresh Fruit Party Pizza
Ingredients:
1 pkg. refrigerated ready-to-slice sugar cookie dough
2 cups vanilla yogurt
2 large eggs, slightly beaten
1/4 cup flour
1/2 tsp grated lemon peel
Fresh fruit (A variety of nice fruit, and canned pineapple rings will work too. Be creative and make it pretty.)
Glaze:
1/4 cup sugar
4 tsp cornstarch
3/4 cup water
1/4 freshly squeezed lemon juice
Preparation:
Slice dough about 1/8 inch thick. Overlap slices in a 10-inch pizza pan in concentric circles. Press dough together with fingers to make a crust. Bake in a 400 degree oven 10 minutes. Remove from oven but leave oven on.
In a medium bowl mix together yogurt, eggs, flour and lemon peel. Spread on partially baked cookie crust. return to oven and bake 10 minutes longer or until filling is barely set. Cool completely.
In a small sauce pan combine sugar and cornstarch. Stir in water. Stir gently over medium heat until mixture boils and thickens. Remove from heat. Stir in lemon juice. Arrange a variety of fruit in a decorative pattern over cooled filling Brush with glaze and chill. Serves 8 or so.
