Overnight Pear Souffle

Ingredients:


3 Tbsp butter or margarine
4 slices enriched white bread - with crusts
3 eggs, beaten
1 cup evaporated skim milk
2 tsp sugar
1/8 tsp nutmeg
1/8 tsp salt
2 pears (anjou or bartlett), peeled, cored, and sliced

1 Tbsp lemon juice
1/2 cup shredded low fat cheddar cheese or skim Mozzarella cheese

Preparation:


Spread butter or margarine on both sides of bread (It is easier to do if bread is frozen.) With sharp knife, cut bread into 1-inch squares. Grease 8 x 8 x 2 inch pan. Place bread in pan. Combine eggs, milk, sugar, nutmeg, and salt, pour over bread. Cover and refrigerate overnight.

Assembly:
Cut pears as directed. Dip in lemon juice to retard discoloration. Place pear slices over bread mixture. Preheat oven to 325 degrees, F. Bake at 325 for 40 minutes, or until bread mixture sets. Sprinkle with cheese and bake 5 minutes longer or until cheese melts. Serves 3.

Note:
Recipe can be doubled. Use a 13 x 9 x 2 inch baking pan.
