Buttermilk Coffee Cake

Ingredients:

2 1/4 cups flour
1/2 teaspoon cinnamon
1 cup brown sugar
3/4 cup white sugar
3/4 cup salad oil

1/2 cups chopped walnuts
1 1/4 teaspoon cinnamon

1 teaspoon soda
1 teaspoon baking powder
1 egg
1 cup buttermilk

Preparation:

Preheat oven to 350º.

A 9x12-inch pan will be needed (glass is preferable).

Mix the flour, sugars, cinnamon and oil in a large bowl. Remove 3/4 cup of the above mixture to small bowl and add the walnuts and additional cinnamon.

To large bowl, add the soda, baking powder, egg and buttermilk. Mix well and spread into pan. Sprinkle nut mix over batter and press in gently. Bake 25 to 30 minutes. Test with toothpick. Watch for burned bottoms. Serves 16.

Variations:

Cherry or Blueberry:

Spread batter in large greased cookie tin. Sprinkle with 1 can drained canned sour cherries (pitted) or blueberries evenly over batter.
To the separated crumb mix, add 3/4 cup nuts, 1/2 cup brown sugar, 1/4 cup margarine and mix until butter is kidney bean size. Sprinkle over fruit and bake 20 or more minutes.
