Walnut & Pecan Caramelized Brie

Ingredients:


2/3 cup brown sugar
1/3 cup water
1/2 cup heavy cream
1/8 tsp. nutmeg
1/8 tsp. cinnamon
5 Tbsp. butter
1/4 cup pecan halves
1/4 walnut halves
4 oz. red seedless grapes
1 Granny Smith apple, sliced and cored
1 8-inch wheel of Brie cheese with top rind removed
8 Nejaime's Lavasch crackers

Preparation:

Combine brown sugar and water in a heavy saucepan and bring to a boil. Cook over medium heat for approximately 4 minutes from the time the mixture come to a boil. Let the mixture cool slightly, then stir in cream, nutmeg and cinnamon. Boil for approximately 3 to 4 minutes until the texture is slightly thickened and glossy. Remove from heat and stir in pecans and walnuts.

Place Brie on 12" round serving plate, surrounded by apple slices, Nejaime's Lavasch and grapes. Pour the carmel evenly over the top of the Brie until it just begins to run over the sides. Use a spoon to evenly distribute the pecans and walnuts. Serve and relish the flavor.
