Oatmeal Molasses Bread
Ingredients:
2 cups quick oats
4 Tbsp shortening
4 cups boiling water
1 tsp salt
1 cup lukewarm water
1 Tbsp molasses
2 Tbsp yeast
2 cups molasses
10 cups flour
Preparation:
Combine the oats and shortening with the boiling water and salt, then let cool to room temperature.
Bloom the yeast in the molasses and water and let double in volume. When ready, add to the oat mixture.
Add in the molasses, and then add in the flour a couple of cups at a time. Once incorporated, kneed on floured surface for 10 minutes.
Grease a large bowl, add dough - cover with a clean cloth. Let double in size. Divide dough in 4. Shape in loaves. Let rise in greased pans.
Bake at 350 degrees for 40-45 minutes.
