Crockpot Dressing

Crockpot Dressing
Ingredients:
1 cup melted butter (2 cubes)
2 cups chopped onions
2 cups chopped celery
1/2 cup fresh or 1 tablespoon dried parsley
2 (8-ounce) cans mushrooms, drained (optional)
1 pound bread cubes (12-13 cups)
3 1/2 to 4 1/2 cups heated chicken broth
2 eggs, beaten
1 teaspoon poultry seasoning
1 1/2 teaspoon salt
1 teaspoon thyme
1/2 teaspoon pepper
Preparation:
Saute onions in butter until transparent; add celery, parsley and mushrooms. Pour this mixture over bread cubes, and add broth, beaten eggs and spices. Mix and toss all ingredients together. Pack lightly in crockpot (at least 3 1/2-quart size). Cover and cook on high for 45 minutes. Reduce to low and cook 4 to 8 hours.
