Blue Ribbon Blue Cheese Meat Loaf
Ingredients:
1 lb. lean ground beef
1 lb. ground pork
1 lb. ground lamb
1 lb. ground veal
6 eggs, beaten
2 15 oz. cans crushed tomatoes
3 T. Dijonnaise
1 T. Worcestershire sauce
4 c. bread crumbs
12 oz. blue cheese crumbles
Salt and pepper to taste
Preparation:
Preheat oven to 375 degrees. Prepare meat loaf pans with non-stick spray
Combine all meats in a large bowl. In a smaller bowl, mix tomatoes, Dijonnaise, Worcestershire sauce, eggs, and spaces. Pour this mixture equally over meat bowl. Fold in bread crumbs and blue cheese crumbles by hand. Form a loaf.
Bake in oven until meat reaches 155 degrees in center. Serves 8–12.
