Chicken Scampi

Chicken Scampi
Skinless chicken breast marinated with garlic and lemon juice topped with tomatoes and Parmesan cheese.
Ingredients:
1/4 tsp black pepper
2 medium garlic cloves , minced
1/4 tsp salt
2 tbsp fresh oregano , chopped
1/4 cup chopped parsley
3 tbsp fresh lemon juice
1/4 cup white wine
5 boneless skinless chicken breasts , cut into 1-inch strips
1 tbsp olive oil
1/4 cup chicken broth (College Inn)
1 tbsp unsalted butter
1 roma tomatoes , diced (about 1/2 cup)
3 tbsp grated parmesan cheese
1 pinch salt and pepper (to taste)
Preparation:
Put the pepper, half of the garlic, salt, oregano, parsley, lemon juice, and half of the wine in a plastic resealable bag. Place the chicken in the bag and cover the chicken with the marinade. Leave in the bag and refrigerate for several hours. Save the marinade once the chicken is done marinated.
Once the chicken is ready to cook, preheat the broiler to a low setting. Place the chicken in a shallow pan and broil approximately 15 minutes 8 inches from the heat, turn once.
While cooking the chicken, pour the olive oil in a sauté pan and heat. Sauté the garlic until perfumed, but not browned. Pour in the rest of the white wine, marinade, and chicken stock. Bring to a boil and cook until the liquid is reduced by a half. Mix in the butter and tomatoes. Season with salt and pepper. Drizzle the sauce over the chicken and sprinkle with Parmesan cheese.
Note: If possible, marinate overnight.
