Faux Split Pea Soup

Ingredients:


4 c chicken broth
2 cans green beans, or you can use frozen or fresh
1 bn Cauliflower
2 smoked turkey legs
Salt & Freshly ground pepper

Preparation:

Place the chicken broth, and the turkey into a large soup pot. Put your green beans into a large measuring cup that will hold 4 cups, add water to the 4 cup mark. Pour the water, reserving the beans, into the broth mix. Let it simmer for an hour or so.

Remove the meat, and let cool. Cut the cauliflower into chunks and toss into the broth, and simmer for about 20 minutes until tender. Toss in the beans, if they are canned, just to heat through. Turn off the heat, and use an immersion blender to thoroughly puree the soup. Debone your turkey legs, chunk the meat. Add it back into the soup.

Tasted and then adjusted seasoning. It needed a bit of salt. We ladled it into our bowls, and began slurping. Oh, boy, it was excellent! You just can't believe how much this tastes like split pea soup. The texture is lighter, but the flavor is there, from the smoked turkey. Add salt and pepper to taste.

Note:
This soup is very good cold. This would make a nice summer soup for a hot day when you need something refreshing and light. This would also be good with a bit of heat, perhaps some crushed red pepper flakes, or a bit of diced tomatoes with green chilis.
