Basil Cheese Spread

A creamy cheese spread greatly enhanced by fresh basil, garlic and roasted red peppers.
Ingredients:
3/4 cup plain nonfat yogurt
2/3 cup Cottage Cheese, 1% fat
1 medium garlic cloves, pressed
2 tbsp fresh basil, chopped
1 pinch salt and pepper
2 oz cooked red bell peppers, drained and chopped, equal to 1/4 cup (optional)
Preparation:
Place the yogurt in a strainer lined with a coffee filter. Set aside and drain for about 1 hour. This should give you about 1/2 cup drained yogurt.
Combine the yogurt, cottage cheese, garlic and basil in a food processor and blend until smooth. Add salt and pepper to taste. Stir in the roasted peppers, if using. Cover and refrigerate, allowing to sit for at least 30 minutes so flavors will blend.
Note: Roasted garlic can be used in place of fresh garlic for a more mellow flavor.
