Shrimp Chip Asian Nachos

This quick and fun appetizer can easily satisfy all your nacho cravings with a little bit of asian flair. Shrimp chips are found at most Asian markets in the dry foods or noodle aisles. Won Ton wrappers are common in most non-Asian markets as well. When frying these, don’t have the oil too hot otherwise the chips will burn very easily. Be ready to pull them out of the fryer as soon as you see them start to puff out (shrimp chips) and brown (won tons wrappers). They will continue to cook once they are pulled out of the hot oil. You can use any type of meat for this dish. For a veggie option, substitute crumbled firm tofu.

Ingredients:

Shrimp Chips or Wonton wrapper (cut diagonally into four triangle sections)
1/2 pound ground pork, beef, chicken or turkey
1/4 cup chopped shallots or onions
2 cloves crushed or finely minced garlic
1 1/2 tablespoons of fish or soy sauce
lots of freshly ground black pepper to taste
diced tomates, green onions, avocado, cheese (optional toppings)

Preparation:


Heat oil and slowly fry shrimp or wonton chips till brown or puffy. Blot on paper towel.

Heat pan and sautee shallots and garlic till crispy and fragrant. Add meat or tofu and cook till brown. Add fish or soy sauce and black pepper.

Arrange chips on plate and top of meat and your choice of toppings.
