Scandinavian Lefse

Ingredients:


4 cups riced potatoes
1/4 cup butter
1/2 cup heavy whipping cream
2 tsp sugar
1 tsp salt
1 1/2 cups flour

Preparation:

Rice cooked potatoes and place in large bowl. Mix in butter and cream. Combine dry ingredients and stir into potato mixture.

Divide your lefse mix into scant hamburger sized patties. Pat them down one by one and then roll out on a floured board (Make sure you have enough flour on the board and rolling pin to prevent sticking). Pick up lefses one by one and grill on a flat top grill. (There are specific grills made for lefse if you want one or you can just use a flat top, griddle or comal. Grill till browned and then store between towels to prevent drying out.

Note: Lefse is traditionally eaten warm with butter or butter and sugar. Lefse resembles a tortilla and can be used as a yummy wrap too.
