Amatller Spanish Hot Chocolate
Rudys A Cook's Paradise

Light and tender churros are often dipped into this thick and rich chocolate that is more dessert than beverage.

Ingredients:

1 Cup Whole Milk
2 1/2 Ounces Amatller Bittersweet Chocolate, broken into pieces
1 1/2 tsps. Cornstarch.

Preparation:

Whisk milk into the cornstarch in a 1 1/2-quart heavy saucepan, then add the chocolate. Bring mixture just to a boil over moderate heat, whisking until chocolate is melted, then simmer mixture, whisking, 2 minutes. Remove from heat and let stand 5 minutes to thicken. Serve with freshly made churros and a dollop of whipped cream.
