Cowgirl Sandwich

Ingredients:

Mayo
Dijon Mustard
Rye Bread, Slices
Tomato, Sliced
Sliced Mild Cheddar
Onion, Thinly Sliced
Sliced Provolone
Whole Green Chilies, Canned chilis work great, or you can roast your own.
Butter

Preparation:


Make a sauce from the Mustard and Mayo, make it to taste, so it isn't too mustardy but just right. Spread your 'special sauce' on each of two slices of Rye bread.

Now, on one slice of Rye Bread, place two slices of Tomato. Then on the other slice of Rye, place two slices of Mild Cheddar. Top the tomato side with two slices of onion and then two slices of provolone.

Open your can of chilies or use your roasted chilies. Lay two pieces of chile on top of the cheddar side of your sandwich. Now very carefully, piece the two parts of your amazing sandwich together.

Ok are you ready? Spread an ridiculous, fattening, obscene amount of butter on the top of your sandwich. Don't miss a single cenimeter of the bread with your unctuous spread. Flip the sandwich over and repeat your obscene butter spreading there.

Meanwhile, heat up a skillet, cast iron works great, but you can use any non-stick skillet. Place your sandwich in lovingly and cook for about 5 minutes. Flip your sandwich and continue cooking for another 2 to 3 minutes until golden brown.

Remove to a cutting board, and slice your spectacular little piece of heaven diagonally in half and eat. Now you know just how decadent and amazingly cowgirlish this sandwich is, enjoy!
