Tangy Orange Hummus

As good as classic hummus is, the addition of fresh orange juice and a few other non-traditional seasonings makes it even better. "This is great for potlucks and picnics. Tahini, a thick paste made from ground sesame seeds, is available in the import section of large grocery stores or in health food stores.

Ingredients:

2 Cans of chickpeas (garbanzo beans), 19 oz. each, rinsed and drained
3/4 cup Freshly squeezed orange juice
1 tsp. Paprika 1 tsp.
1/2 tsp. Chili powder
1/2 tsp. Dry mustard
1/2 tsp. Ground coriander
1/2 tsp. Ground cumin
1/2 tsp. Ground ginger
1/8 tsp. Cayenne pepper
3 Garlic cloves
1/3 cup Tahini
3 Tbsp. Apple cider (or balsamic) vinegar
1 tsp. Soy sauce

Preparation:

Process chickpeas, in 2 batches, in food processor until smooth.

Put all chickpea purée into food processor. Add remaining 12 ingredients. Process until well combined. Makes about 4 cups (1 L).
