Asian Duck Wraps
Vickie Patterson, 'The Duck Lady'

Ingredients:

Garlic Duck Breasts:


4 duck breasts
Basic Garlic Marinade, recipe follows.
Basic Garlic Rub, recipe follows.

Plum Sauce:

1/2 cup Blackberries, fresh or frozen
1-8 ounce jar of plum sauce
1/2 teaspoon five spice seasoning
1 teaspoon soy sauce

Filling:


1 head of shredded green cabbage
1 cup shredded red cabbage
1 cup red pepper, cut into thin long strips
1 shredded carrot
4 green onions, chopped fine
2-3 jalapenos, diced fine
2 Tablespoons fresly chopped garlic
3/4 cup freshly chopped cilantro
2 to 3 Tablespoons oyster sauce, adjust to taste
1 Tablespoon soy sauce
1 to 2 teaspoons, five spice powder, adjust to taste
salt & pepper, to taste

8 flour tortillas

Preparation:

Plum Sauce:

Mix together the ingredients and set aside.

Filling:

Toss all ingredients together.

Garlic Duck Breasts:
Marinade the duck breasts for at least 2 hours. Remove the breasts, then grill to a nice medium rare. Thinly slice the duck across the grain. Toss with the marinade. Pan sear quickly to seal in flavors. Don't overcook!

Assembly:

Place a good amount of filling in each tortilla. Lay a few strips of duck on the filling and roll up tightly Cut each roll into three sections. Serve with plum sauce.





Basic Garlic Duck Marinade

Ingredients:

2 Tablespoons Lemon Juice
1/4 cup Olive Oil
2 Tablespoons Basic Duck Rub, Recipe Follows

Preparation:


Mix the ingredients together in a zip lock bag. Add in duck breasts. This amount of marinade will do about 8 breasts nicely.

Note: This was created for duck but is great on all wild game, chicken, beef and pork.




Basic Garlic Duck Rub

Ingredients:


1/4 cup Granulated Garlic
2 Tablespoons Parmesan Cheese, Grated
1 Tablespoon coarse Salt
1 Tablespoon Ground Pepper
2 Tablespoons fresh Chopped Garlic
2 Tablespoons dry Basil
1 Tablespoon Onion Powder
1 teaspoon Meat Tenderizer

Preparation:


Mix all ingredients.

Note: You can substitute 1/3 cup Johnny's Garlic Spread Seasoning available at Costco, but don't tell anyone... kirra
