Berry Vinegar
Healthy Culinary Treasures from the Pacific Northwest, by the Oregon Dietetic Association

Berries and garlic make a wonderful vinegar for dressings.

Ingredients:

4 cup vinegar
1/3 cup sugar
2 cup fresh strawberries (and/or raspberries, blueberries)
3 medium garlic cloves, peeled & split

Preparation:


Combine all ingredients in a saucepan and bring to a boil. Simmer 10 minutes. Remove from heat, cover tightly and let "steep" for 2 days.

Strain through cheesecloth or fine sieve into containers with tight-fitting lids. Store in a cool place. Yield 1 quart (64 Tablespoons).

Note: Dressing can be used in any salad dressing that calls for vinegar, but is especially good in dressing for fruit salads or greens that have fruit added.
