Seasoned Pork Loin

Ingredients:


1 tablespoon paprika
2 cloves garlic, crushed
3 tablespoons olive oil, plus more for cooking
1 teaspoon salt
1 to 2 pound boneless pork loin

Garnish:

1 clove garlic, minced
1 12-ounce jar roasted red peppers

Preparation:

In a small bowl, mix paprika, garlic, olive oil and salt. Coat the pork loin on all sides with the spice mixture. Place pork in a shallow bowl and cover with foil. Refrigerate at least overnight and up to a few days.

Preheat oven to 350 degrees. Put a little olive oil in the bottom of a baking dish, then add meat. Bake until internal temperature reaches 160 degrees, or about 1 hour.

After you take the meat out of the pan, deglaze the pan with a few tablespoons of white wine, broth or water. Pour liquid over pork after you have sliced it.

For garnish, saute garlic until soft, then add peppers and cook for 15-20 minutes. Add to top of pork loin.
