French Red Wine-Infused Idaho Fingerling Potato Salad
Ingredients:
2 pounds small Idaho fingerling potatoes
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
3 tablespoons olive oil
1/2 cup celery, thinly sliced
1/4 cup fresh chervil, chopped
2 tablespoons chives, chopped
Preparation:
Bring potatoes to a boil over high heat, reduce to medium and cover. Let simmer until tender.
Blend vinegar, mustard, salt and pepper in a food processor. Slowly add in olive oil to create an emulsion.
When potatoes have cooled, add the rest of the ingredients and cover with dressing. Season to taste.
