Mojo Sauce
Ingredients:
4 garlic cloves, minced
1 teaspoon salt
1/2 cup olive oil
1/2 teaspoon ground cumin
1/4 cup white vinegar
1/4 cup orange juice
1/4 teaspoon dried oregano
1/8 teaspoon pepper
Preparation:
Place minced garlic on cutting board and sprinkle with salt. Using flat side of chef’s knife, scrape garlic and salt together against cutting board until garlic is ground into smooth paste.
Heat oil in medium saucepan over medium heat until shimmering. Stir in
garlic paste and cumin and cook until fragrant, about 30 seconds. Off heat,
whisk in remaining ingredients. Cool to room temperature, whisk to recombine, and serve. (The sauce can be refrigerated in an airtight container for up to 1 day.) Makes about 1 cup
