Mrs. Weasley's Stew

In Chapter 5 of "Harry Potter and the Sorcerer's Stone," when Harry arrives at the Burrow, Mrs. Weasley whips him up a "thick steaming onion soup." And in the latest movie, she's seen chopping vegetables in the kitchen of No.12 Grimmauld Place. This recipe calls for Stilton, a British blue cheese.

Ingredients:


1 tablespoon olive oil
1/3 onion, chopped
1 clove garlic, crushed
4 baby leeks or 1 small sweet onion, chopped
2 cups vegetable stock
1 ounce Stilton cheese
Rustic bread for accompaniment

Preparation:


Preheat large saucepan. Heat olive oil to medium. Add onion, garlic and leeks or onion and sauté until soft. Pour in stock. Bring to a boil; lower heat and simmer 10-12 minutes. Add the Stilton and stir until melted. Purée in food processor or blender until smooth. Ladle in 2 soup bowls and serve with sliced bread.
