this receipe is for 2 but can easily be adopted for more by just increasing amounts. We make this in a small crockpot and it makes roughly 8 sandwiches. depends on how meat you like in your sandwich. i like mine thick.
1 beef roast, roughly 2 lbs, doesnt matter what kind because it will be cooked until it falls apart easily with a fork. i buy whatever is on sale
V8 juice
1 garlic clove
about 1/4 cup of thinly sliced onion (or more if you like more onion taste)
place the meat within the crockpot, cutting it as needed. season with salt and pepper. pour over enough V8 juice to cover 2/3rd of the way up the meat. dont drown it. for 2, this is about 6 to 8 oz of the V8. squash the garlic clove and throw it in, add onions on top.
cook on high for anywhere between 4 to 6 hours or until meat can be pulled apart easily by a fork. you want the meat to be juicy but not drowning in juices. remove garlic clove and serve.
this is the basic receipe. you can add anything else that you like, make spicy, oriental, barbecue..well you get the idea.
for sandwichs we usually serve it on crusty type rolls/breads with individual toppings or veggies, sauces to each individual tastes.
great when out of town guest come in for the 1st day of their stay. will hold warm until they get there. good also for parties and other functions
