Mary's Marvelous Poppers
Sorry I have never measured this recipe. I just grab fresh garden jalapenos when they look great, and adjust everything by how many I am making. I am sure you will enjoy this recipe. It is adaptable, sometimes I add in cheddar cheese, sometimes I make them cheese and potato poppers. Anyway, try these and think of how you'd like to modify them.
Ingredients:
Jalapenos, I love the big ones
Sausage, I use a hard chorizo, but any sausage or ground beef will do.
Onions, chopped
Red Bell Pepper chopped
Cream Cheese
Salt & Pepper
Dredging Ingredients:
Eggs whipped with just a bit of milk
Seasoned flour (Salt, Pepper, and maybe some Paprika)
Panko bread crumbs
Frying oil, I usually use Canola
Preparation:
Fry your sausage, onion and pepper until the onions are translucent and the sausage is browned. Let cool a bit.
Prep your Jalapenos, Cut tops off, then cut them in half, and seed them. You might want to use latex gloves for this step, or at least be sure to wash your hands thoroughly after handling peppers.
Mix your cream cheese into your sausage mixture. Then fill your Jalapeno halves with your cream cheese mixture.
Make your dredging station with three shallow dishes or bowls. One for egg mixture, one for the seasoned flour and one for the Panko. Now you are ready to start dredging so you dip filled Jalapenos into the eggs, then into the flour mixture. Then back into the egg mixture, then into the panko bread crumbs. Set aside on a plate. Keep dipping.
Now that you are all breaded.... Put your Jalapenos into the fridge and go have a nice cuppa coffee or tea. Put your feet up and relax. Add one of your favorite recipes to the forum. Answer your email.
About an hour later, or after your jalapenos have cooled off in the fridge, heat your oil. Then grab a dish and cover it with paper towels for draining.
Fry your jalapenos in hot oil, you don't have to deep fry them but I usually have an inch or inch and a half of oil in the pan, I start with skin side down and let them cook most of the time there, then I flip them for about a minute. Then i use a chinese wire dipper to drain them just before I pop them out on the paper towels. Enjoy these poppers, you will find them ADDICTIVE!
