Healthy High-Energy Muffins

Ingredients:


30 oz red kidney beans, canned and drained (2 cans)
1/3 cup fat free milk
4 tbsp margarine , softened
3/4 cup packed light brown sugar
3 eggs
1 tsp vanilla extract
1 cup white all purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp ground mace
3/4 cup seedless raisins
1/2 cup packed light brown sugar
2 tbsp quick cooking rolled oats
2 tbsp white all purpose flour
1/4 tsp ground cinnamon
2 tbsp margarine , cut into pieces (cold)

Preparation:

Preheat oven to 375 degrees F.

Using a food processor or blender, puree beans and milk until smooth.

Using electric beaters, mix margarine, brown sugar, eggs, and vanilla until smooth.

Combine egg mixture with bean mixture. Mix flours with baking soda, salt, and spices. Stir flour into bean mixture. Add in raisins. Spoon mixture into 24 cooking spray coated muffin tins.

For Cinnamon Streusel. Mix brown sugar, oats, flour, and cinnamon. Cut in margarine to form a crumb. Top mixture with Cinnamon Streusel. Bake 20 to 25 minutes.
