Reduced-Fat Creamy Pesto Dip

Creamy dips can pack more than 500 calories and 50 grams of fat per 1/3 cup portion. The goal of this recipe was to create a flavorful version of creamy pesto dip that was significantly lower in calories and fat than the originals. Ultimately, this dip is so low in fat and calories on the whole, that it includes some full-fat ingredients such as oil and cheese for even more flavor.

Ingredients:

1 cup low-fat cottage cheese
1/4 cup boiling water
1 cup low-fat sour cream
1/4 cup finely chopped fresh basil
1 garlic clove, minced
5 tablespoons grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper

Preparation:


Puree cottage cheese and boiling water in blender until completely smooth. Transfer to bowl, then whisk in sour cream, basil, garlic, Parmesan, and oil. Season with salt and pepper. Refrigerate at least 1 hour. Serve. Makes about 2 cups, enough for 6 servings.
