Cottage Cheese Delight

Ingredients:


1 pound monterey jack cheese, grated
1 cup milk
1 cup flour
1 pint low fat cottage cheese
6 eggs
1/2 cup melted butter
fresh bread crumbs, (blended leftover croissand crumbs are great!)

Preparation:


Grease an 8 x 8 or 9 x 9 pan. Sprinkle with Monterey Jack cheese. Combine the milk, flour, cottage cheese and eggs, blend well. Pour egg mixture over the cheese. Dust with bread crumbs. Bake 45 minutes at 350 degrees. Cut into squares and top with sour cream and fruit conserve or fruit.

Notes: It may be heated in the microwave if you prefer to bake it a day ahead. I reheat about 1 minute per square.

You can double this recipe and just bake it in a 9 x 13 pan for 1 hour and 20 minutes.

Leftovers make great filling for crepes; rolled over slices about 1 x 3 and it is a blintz! Top with sour cream and conserve or fresh fruit.
