Coco Lopez Fruit Dip/Topping
I use this recipe as a fruit topping or dip, but also is very good as a fresh cake topping opposed to a sugary icing.
1 quart Whipping Cream
1 box Coconut instant pudding, Jello brand
5 oz Coconut Rum
1-2 teaspoons Vanilla extract to taste
1 can Coco Lopez brand Coconut milk (used usually for pina coladas and found in the drink mixers section of the grocery store)
One 8 oz bag frozen shredded coconut, optional.
In a bowl add whipping cream and pudding, mixing with an electric mixer, slowly adding in the Coco Lopez, Rum and Vanilla. Add the optional frozen coconut at this point, and whip until mixture becomes thick. Refridgerate at least an hour.
