Awesome Meatballs
Ingredients:
Meatballs:
2 lbs. fairly lean ground beef (I used 80/20)
2 eggs, slightly beaten
1 c. cream (I used whipping cream)
1-1/2 c. Italian style breadcrumbs (I used Progresso)
Sauce:
2 c. brown sugar
2 T. dry mustard
1 c. vinegar (I used 1/2 c. red wine vinegar, and 1/2 c. white wine vinegar)
1/2 c. sherry
1/2 c. port
Preparation:
Meatballs:
Mix together the meatball ingredients - I use a hand mixer, which makes the mixture nice and fluffy. Form into balls about 1-1/2 inch in diameter. Place them carefully in a rice cooker or slow cooker, which you have sprayed lightly with cooking spray - you will have several layers of meatballs.
Sauce:
Mix together the sauce ingredients, and pour over the meatballs.
Close the lid, and switch the timer to 'cook' on the rice cooker, or high on the slow cooker. The rice cooker will switch to 'warm' after approximately 30-35 minutes. Open the lid carefully, stir the meatballs, and serve as desired.
