Broiled Salmon with Pesto & Olives

Ingredients:


1 Oil, cooking spray, 0.33 second spray, serving
1 lb salmon fillet (4 pieces)
1 cup fresh basil, loosely packed
2 tbsp Nuts, pineapple, pignolia, dried
2 tbsp canned black olives, sliced
1 tbsp fat free mayonnaise
2 medium garlic cloves, minced
2 tsp olive oil
1 tsp grated orange peel
2 tbsp orange juice

Preparation:

Preheat the broiler and lightly spray a broiler-safe baking sheet with vegetable oil spray. Rinse the fish, pat dry with paper towels, and put on the baking sheet.

In a food processor or blender, process the remaining ingredients for 15 to 20 seconds, or until a little chunky.

Using a spoon or brush, spread the pesto mixture evenly over both sides of the fish.

Broil the fish about 4 inches from the heat for 4 to 5 minutes. Turn and broil other side for 4 to 5 minutes, or until done.
