Bean, Bacon, & Blue Dip
Ingredients:
1/4 cup fresh chopped onion
1 tbsp chopped parsley (use fresh parsley)
1 tsp fresh thyme (1/4 tsp dried thyme can be substituted)
1/4 tsp salt
1/4 tsp black pepper, freshly ground
15 oz unsalted canned navy beans, drained
1 medium garlic cloves, minced
1/2 cup crumbled blue cheese
3 piece Bacon, cured, raw, thick slices, 12/lb, cooked and crumbled
Preparation:
Combine onion, parsley, thyme, salt, pepper, beans, and garlic in a food processor or blender. Pulse until texture is smooth and creamy.
Spoon bean mixture in a serving bowl and sprinkle blue cheese and bacon on top.
Note: Serve this with tortilla chips, pita chips, Melba toast, or crackers. For a healthier option, substitute turkey bacon. This is also good as a warm dip: heat in oven until warmed through and cheese is melting, about 7 minutes. If serving warm, do not overcook bacon, as it will crisp more in the oven.
