Basil & Tomato Dressing

Ingredients:


6 piece Tomatoes, sun dried, piece (not packed in oil)
1 medium tomatoes, coarsely chopped (about 1 cup)
1 medium garlic cloves, minced or pressed
1 cup fresh basil, coarsely chopped and loosely packed
1/4 cup water
2 tbsp balsamic vinegar
1/4 tsp salt (or to taste)

Preparation:

Cover the sun-dried tomatoes with boiling water in a heatproof bowl and set aside. Combine the chopped fresh tomatoes, garlic, basil, cup water, vinegar, and salt in a blender or food processor. When the sun-dried tomatoes have softened, drain and add them to the other ingredients. Puree the mixture until smooth.

Note:
Covered and refrigerated, this dressing will keep for about a week. Tastes great on mixed greens.
