Bacon & Pineapple Appetizers

Ingredients:
12 piece raw bacon slices, halved crosswise
12 Waterchestnuts, Chinese, fresh, halved
2 cup Pineapple, chunks, canned, with water, drained, equal to 24 chunks
4 tsp low sodium soy sauce
Preparation:
Preheat oven to 400 degrees F. Wrap bacon slice around a pineapple chunk and water chestnut half. Secure with a wooden toothpick.
Bake on rack in a shallow pan for 15 minutes. Brush with soy sauce and bake an additional 5 to 10 minutes or until bacon is crisp.
Note: Most supermarket salad bars or produce departments carry pineapple in chunk form. This recipe is carb-safe. If canned pineapple chunks are substituted, be aware of any additional sugars in the canning juice.
