Green on Green

Ingredients:


1 pkg frozen chopped spinach, thawed & drained well
2 cups mayonnaise
1/4 cup chopped white onion
1 small clove garlic, minced
1 tbs. lemon juice
1 medium cucumber, sliced into round medallions
ripe olive slices or pimiento for garnish

Preparation:

Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best.) While very cold, form small balls with spinach mix and place each one on a cucumber medallion. Top with a slice of ripe olive or pimiento and arrange on serving plate.

Carbs: Approximately 1 carb per medallion.
