Grange Cornbread

Grange Cornbread

Ingredients:

1 C yellow cornmeal
1/3 C flour
3 tsp baking soda
1/4 tsp salt
3 T sugar
1 C cream style corn (or whole kernel, fresh or canned)
1 C sour cream (or yogurt or sour cream substitute or buttermilk)
1/8 C veg oil
2 eggs, lightly beaten with a fork

Preparation:


Mix all ingredients.

Bake in a greased 8" pan at 400º for about 30 min until tester comes out clean.

Variations:

Add one or more of the following: chopped sweet or hot red peppers, chopped green chile peppers, chopped cilantro., whole cumin seed.

You can preheat a greased skillet in the oven and then bake the cornbread in that (baking time is shortened about 10 minutes by this routine). This gives the cornbread a more pronounced crust.
