[font=Comic Sans MS] Ok, here we go. This is one of my favorites and I first learned about it it years ago at a Brittish pub. Yeah funny I know.
Take some skirt steak and marinate it for anywhere from 4 to 24 hours. I normally go for the full 24.
The Marinade consists of
Tequila.. enough to cover the meat
jar of pace salsa... I always use hot but the sissies can use mild
and a bit of extra tomato juice. The acids in the tomato help to tenderize.
Now for the hard part. Light the grill. I use charcol and I keep the heat low, around 250 degrees and I cook until medium. Carry over heat will take it to medium well.
Next I use a bit of the marinade and addit to my cooking side veggies. Just enough to give some extra flavor.
Add your choice of potato and poof you are done. cut of meat servie with veggies on a flower or corn tortilli
