Fresh Fruit Salsa

The amount of sugar and lime juice to use depends on the ripeness of the
fruit.

Ingredients:


2 cups coarsely chopped mango, pineapple, or peach (see note above)
1/2 cup minced red onion
1/2 red bell pepper, stemmed, seeded, and chopped fine
1 jalapeño chile, seeded and chopped fine
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice, plus more to taste
Salt and pepper
Sugar

Preparation:

Combine fruit, onion, bell pepper, jalapeño, cilantro, and 2 tablespoons of
lime juice in bowl. Cover and let sit at room temperature until flavors meld, about 30 minutes. Season with salt, pepper, sugar, and additional lime juice to taste and serve. (The salsa can be refrigerated in airtight container for up to 2 days.) Makes about 3 cups
