Cream Cheese-Pineapple Spread

Cream Cheese-Pineapple Spread

Ingredients:


2 8 oz blocks of cream cheese, softened (I actually leave mine out of the refrigerator overnight to soften)
1 15 oz can crushed pineapple (in it's own juice)
1/4 teaspoon salt (yes, the salt actually works with the sweetness)
1/4 teaspoon freshly ground black pepper.

Preparation:


Empty softened cream cheese into deep bowl; With hand mixer, beat till combined. at very low speed, add the rest of the ingredients and whip till ONLY combined.

You can either assemble the sandwiches immediately, as it's easy to spread the softened cheese spread mixture at this point, as it firms up when refrigerated, can be rather a "bear" to try to spread on delicate breads..

Notes:
You can also do the same thing with Pimientos, and make good old Pimiento Cheese..........

I also do this with chopped toasted pecans and chopped apricots for the Holiday Season.........Enjoy!!!!
