Easy Scallion Rice
Ingredients:
2 cups chicken stock (canned, or from a bullion cube)
1 cup white (I prefer Jasmine rice) rice
4 scallions (green onions) cleaned and sliced on the diagonal (white and tender parts of green, leave the ends for the compost heap).
Preparation:
In a medium lidded saucepan, bring the chicken stock to a boil. Add sliced scallions, boil 1 minute. Add rice, stir well until incorporated, then cover and immediately turn down heat to very LOW. Steam for 20 minutes DO NOT STIR! Turn off heat, and let steam for another 10 minutes while plating the dishes. Enjoy!
