Corn Grits
Ingredients:
3 ears yellow corn, cut from cobs
1 T butter
1 T shallots, minced
1/2 cup stone ground grits
1 1/2 cups chicken stock plus extra if needed
1/2 cup heavy cream
3 oz. Gorgonzola cheese
2 tsp. kosher salt
1/2 tsp. black pepper
Preparation:
In a very hot, dry iron skillet place corn and dry char for 4 to 5 minutes or until dark; remove and reserve.
In a heavy-bottom pot melt butter and sauté shallots for 2 minutes; add grits and chicken stock. Stir consistently for 30 minutes. Add cream and more stock if needed; stir for an additional 10 minutes. Mix in corn, cheese, salt and pepper.
