This recipe was reduced 4 times from the original used at Marriot Hotels. Suggestion: due to the reduction, I find towards the end of cooking have extra milk to thin it some.

1 quart milk
3 0z, cooked sausage (3 minutes for 3 patties in microwave)
1/2 cup bacon drippings/fat/bacon peices (yessss fat :P )
7/8 cups flour
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper ( i use more)

Spray a deep sauce pot with cooking spray or brush with butter and steam milk to 170 degrees farenheidt (or until barely boiling)
Put sausage in a covered microwave bowl and cook 3 minutes or until done with half the bacon drippings.
Put cooked sausage mixture and 1 cup of the milk into a blender or processor and process until no lumps remain.
In a large bowl combine; flour, sausage mixture, remaining bacon drippings, salt and pepper and whisk until smooth.
Add this mixture to the steaming hot milk, turning down the heat to half, and whisk continuously until again slowly boiling. Reheating thoroughly, stirring, mixture will begin to thicken quickly before done. (at this point add the extra milk to your liking to adjust thickness, and whisk while still on stove top if too thick)

Best biscuit gravy I've ever had ;)

Top
