Brine for Marinating Chicken Wings
Ingredients:
3/4 cup coarse kosher salt
3/4 cup sugar
1 cup boiling water
1 gallon cold water
1 tablespoon pepper
Preparation:
Dissolve dry ingredients in the hot water. Soak the wings for one to two hours. Avoid using iodized salt since it can add a metallic flavor. Most frozen wings have already been brined to add weight.
