Lamb Tagine

Ingredients:


2-1/2 diced lamb sirloin
salt
1 t. pepper
1 onion
1 t. ground ginger
3 garlic cloves
1 T. gingerroot
1 T. hot, smoked paprika
1 t. saffron
1-1/2 t. ground fennel
2-1/2 t. cumin
1/2 t. nutmeg
1/2 t. cardamom
1 T. cinnamon
1 t. cayenne
1 can diced tomatoes
2 T. harrisa
1 c. pearl onion
1 c. dates
2 T. honey
2 T. sesame oil

Preparation:


Sear off lamb and season with salt and pepper. Add onion and cook until translucent. Add ginger and garlic. Toss in all spices and continue to cook 2 minutes. Add tomatoes and harrisa. Add pearl onion, reduce heat to simmer, and cover pan. Cook until tender, stirring every once in a while. Add dates, honey, and sesame oil. Check seasoning. Cool. Serve with butternut squash and toasted sesame seeds and a side of couscous.
