Grilled Corn with Jalapeno Mayonnaise

Ingredients:


Corn, on the cob and shucked
Olive Oil
Queso Fresco or Crab Meat and Parmesan Cheese

Jalapeno Mayonnaise:

1 cup Mayonnaise
1/2 Garlic Clove, chopped
1ounce Water
1/2 Zest of small lime
1 Large Jalapeno, chopped
1 tsp Cumin Coriander
1 tsp Salt

Preparation:

First make the Jalapeno Mayonnaise. In a mixing bowl combine mayonnaise and water. Blend with hand held immersion blender. Add garlic, zest of lime, jalapeno, cumin, and salt. Blend with immersion blender. Set aside or refrigerate.

Brush corn with olive oil and add salt and pepper to taste. Grill the corn, constantly turning on hot grill pan for about 20 minutes, until charred.

Smear corn with jalapeno mayonnaise. Then roll corn into generous amount of option 1 or 2:

Variations:
Option 1 – Queso Fresco, or feta cheese
Option 2 – Finely chopped or shredded crabmeat and top sprinkle with grated Parmesan cheese
