Deviled Peanuts

Fresh peanuts roasted with lime juice and spices.

Ingredients:

2 tbsp margarine
1 tbsp fresh lime juice (or lemon juice)
1 tsp ground cumin
1 tsp black pepper
1/2 tsp ground red chili pepper (or more to taste)
1/4 tsp salt
3 cup peanuts (or shelled raw pumpkin seeds)

Preparation:

Combines margarine, lime juice, cumin, black pepper, ground red pepper, and salt together in a saucepan. Cook and stir ingredients until butter has been melted. Stir peanuts into mixture. Coat by tossing lightly.

In a 13x9x2-inch baking pan spread the peanuts out. Bake for 15 to 20 minutes or until toasted, stirring occasionally, in a 350 degree F oven. Cool mixture before serving.
