Crispy Mustard Chicken

Ingredients:


8 boneless skinless chicken breasts
1/2 tsp salt
1/8 tsp black pepper
2 tbsp Mustard, yellow, prepared
1 eggs
6 tbsp Cheese, parmesan, dried, grated (Stella Foods)
1/4 cup Bread Crumbs, white, soft
1 cooking spray (Wesson)

Preparation:


Begin by sprinkling each chicken breast piece with salt and pepper. Then, beat together the mustard and egg with a whisk until well blended. Combine the cheese and breadcrumbs, and stir well.

Dip the chicken in the egg mixture, then dredge it into the breadcrumb mixture. Let each piece stand at room temperature for about 10 minutes on wax paper to set coating.

Preheat your oven to 400 degrees F and then transfer the chicken to the rack of a roasting pan coated with cooking spray. Bake for 40 minutes, or until the chicken is done and the coating is lightly browned. Transfer the chicken to a serving platter and enjoy!
